Ingredients 

Meatballs

  • 1 lb Ground beef
  • ½ cup Cooked rice
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Soup

  • 8 cups Chicken broth
  • 1 Onion, chopped
  • 2 Carrots, sliced
  • 2 Zucchini, chopped
  • 1 can Tomatoes, diced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 cup Cilantro, chopped

Instructions 

  1. 1. In a mixing bowl, combine ground beef, cooked rice, egg, minced garlic, salt, and black pepper. Mix well and form into small meatballs.
  2. 2. In a large pot, bring chicken broth to a boil. Add chopped onion, sliced carrots, chopped zucchini, diced tomatoes, cumin, and oregano. Stir well.
  3. 3. Gently add the meatballs to the pot. Reduce heat and let simmer for 30 minutes.
  4. 4. Stir in chopped cilantro and let cook for an additional 5 minutes. Serve hot.
