  • 1 kg boneless leg of lamb trimmed of excess fat
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. In a small bowl, mix together olive oil, garlic, rosemary, salt, and black pepper.
  3. 3. Rub the mixture all over the lamb.
  4. 4. Place the lamb on the grill and cook for about 60 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C) for medium-rare.
  5. 5. Remove the lamb from the grill and let it rest for 10 minutes before slicing.
