Bahamian Chicken Souse Recipe

- 2 lbs Chicken cut into pieces
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 cup Carrots sliced
- 1 cup Potatoes diced
- 1 cup Celery chopped
- 1 tablespoon Allspice
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 cups Water
- 1 cup Lime Juice freshly squeezed
1. In a large pot, add the chicken pieces and cover with water. Bring to a boil, then reduce to a simmer.
2. Add the chopped onion, minced garlic, sliced carrots, diced potatoes, and chopped celery to the pot.
3. Stir in the allspice, salt, and black pepper. Let it simmer for about 30 minutes.
4. Add the lime juice and let it cook for another 10 minutes.
5. Serve hot and enjoy your Bahamian Chicken Souse!
