Ingredients 

Main Ingredients

  • 1 lb large shrimp, peeled and deveined
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • 1 cup shredded coconut
  • ½ cup panko breadcrumbs
  • to taste Cooking spray

Instructions 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. In a small bowl, combine flour, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. In a third bowl, mix shredded coconut and panko breadcrumbs.
  5. Dredge each shrimp in the flour mixture, then dip in the beaten eggs, and finally coat with the coconut-panko mixture. Place on the prepared baking sheet.
  6. Lightly spray the coated shrimp with cooking spray.
  7. Bake for 12-15 minutes, or until shrimp are cooked through and coating is golden brown.
