Ingredients 

Main Ingredients

  • 4 large Russet potatoes peeled and cubed
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese shredded
  • to taste salt
  • to taste black pepper
  • 4 slices bacon cooked and crumbled
  • 2 tablespoon chives chopped

Instructions 

  1. 1. In a large pot, cook the bacon until crispy. Remove and set aside.
  2. 2. In the same pot, sauté the onions and garlic until translucent.
  3. 3. Add the potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
  4. 4. Use a blender to puree the soup until smooth. Return to pot.
  5. 5. Stir in the heavy cream, cheddar cheese, salt, and pepper. Heat through.
  6. 6. Serve hot, topped with crumbled bacon and chives.
