Ingredients 

Main Ingredients

  • 500 g Codfish fillets cut into chunks
  • 2 Onions chopped
  • 3 Garlic cloves minced
  • 2 Bell peppers sliced
  • 400 g Tomatoes diced
  • 2 tablespoon Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 500 ml Fish stock
  • 2 Bay leaves

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic. Sauté until the onions are translucent.
  3. Add the sliced bell peppers and cook for another 5 minutes.
  4. Stir in the diced tomatoes, paprika, salt, and black pepper. Cook for 10 minutes.
  5. Pour in the fish stock and add the bay leaves. Bring to a boil.
  6. Add the codfish chunks and reduce the heat to low. Simmer for 20 minutes or until the fish is cooked through.
  7. Remove the bay leaves and serve hot.
