Ingredients

  • 1 lb beef, cubed
  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  2. Add onion, carrots, celery, and garlic. Cook until vegetables are softened.
  3. Stir in lentils, diced tomatoes, beef broth, thyme, rosemary, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes or until lentils are tender.
