Ingredients 

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 6 cups Beef Broth
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add the beef and cook until browned on all sides. Remove and set aside.
  2. 2. In the same pot, add the onion and garlic. Cook until softened.
  3. 3. Add the carrots and potatoes. Cook for a few minutes, stirring occasionally.
  4. 4. Return the beef to the pot. Add the lentils, beef broth, tomato paste, thyme, rosemary, salt, and pepper. Stir to combine.
  5. 5. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until the beef and lentils are tender.
  6. 6. Adjust seasoning with salt and pepper if needed. Serve hot.
