  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 can Enchilada Sauce
  • 4 cups Chicken Broth
  • 1 cup Shredded Cheddar Cheese
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. 2. Add the black beans, corn, enchilada sauce, and chicken broth to the pot. Stir to combine.
  3. 3. Add the cumin, chili powder, garlic powder, and onion powder. Stir well.
  4. 4. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
  5. 5. Season with salt and black pepper to taste. Serve hot, topped with shredded cheddar cheese.
