Beef Mushroom Barley Soup Recipe

Main Ingredients
- 1 lb Beef stew meat cut into bite-sized pieces
- 1 cup Pearl barley
- 8 oz Mushrooms sliced
- 1 Onion chopped
- 2 cloves Garlic minced
- 8 cups Beef broth
- 2 tablespoon Olive oil
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 tablespoon Fresh parsley chopped, for garnish
Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
Add chopped onion and garlic to the pot. Cook until onions are translucent.
Add mushrooms and cook for another 5 minutes.
Pour in beef broth and bring to a boil. Add barley, reduce heat, and simmer for 1 hour.
Season with salt and pepper to taste. Garnish with fresh parsley before serving.
