Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Celery sliced
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 6 cups Beef broth
  • 2 cups Potatoes diced
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 can Diced tomatoes

Instructions 

  1. 1. In a large pot, brown the beef over medium heat.
  2. 2. Add the onions and garlic, cook until softened.
  3. 3. Pour in the beef broth, bring to a boil.
  4. 4. Add the carrots, celery, potatoes, tomatoes, and seasonings.
  5. 5. Reduce heat and simmer for 45 minutes, or until vegetables are tender.
  6. 6. Adjust seasoning to taste and serve hot.
