Main Ingredients
- 1 lb Beef stew meat cut into bite-sized pieces
- 2 cups Carrots sliced
- 2 cups Celery sliced
- 1 cup Onion chopped
- 3 cloves Garlic minced
- 6 cups Beef broth
- 2 cups Potatoes diced
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
- 1 teaspoon Dried thyme
- 1 teaspoon Dried rosemary
- 1 can Diced tomatoes
1. In a large pot, brown the beef over medium heat.
2. Add the onions and garlic, cook until softened.
3. Pour in the beef broth, bring to a boil.
4. Add the carrots, celery, potatoes, tomatoes, and seasonings.
5. Reduce heat and simmer for 45 minutes, or until vegetables are tender.
6. Adjust seasoning to taste and serve hot.
