Beefy Lentil Vegetable Soup

Main Ingredients
- 1 lb Ground Beef
- 1 cup Lentils
- 2 Carrots, diced
- 2 stalks Celery, diced
- 1 Onion, diced
- 3 cloves Garlic, minced
- 6 cups Beef Broth
- 1 can Diced Tomatoes
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Oregano
- to taste Salt and Pepper
1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
2. Add the diced carrots, celery, and onion to the pot. Cook until the vegetables are tender, about 5-7 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the lentils, beef broth, diced tomatoes, dried thyme, and dried oregano. Bring to a boil.
5. Reduce the heat to low and let the soup simmer for about 45 minutes, or until the lentils are tender.
6. Season with salt and pepper to taste. Serve hot.
