Beefy Mushroom Barley Soup

Main Ingredients
- 1 lb Beef Stew Meat cut into bite-sized pieces
- 1 cup Pearl Barley
- 8 oz Mushrooms sliced
- 1 Onion chopped
- 2 cloves Garlic minced
- 6 cups Beef Broth
- 2 tablespoon Olive Oil
- 1 teaspoon Dried Thyme
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper to taste
Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
Add onions and garlic, cook until softened.
Add mushrooms and cook for another 5 minutes.
Pour in beef broth, add barley, thyme, salt, and pepper. Bring to a boil.
Reduce heat and let simmer for 45 minutes or until barley is tender.
Adjust seasoning if needed. Serve hot.
