Ingredients 

Main Ingredients

  • 1 lb Beef Stew Meat cut into bite-sized pieces
  • 1 cup Pearl Barley
  • 8 oz Mushrooms sliced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 6 cups Beef Broth
  • 2 tablespoon Olive Oil
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  2. Add onions and garlic, cook until softened.
  3. Add mushrooms and cook for another 5 minutes.
  4. Pour in beef broth, add barley, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and let simmer for 45 minutes or until barley is tender.
  6. Adjust seasoning if needed. Serve hot.
