  • 4 tablespoon Butter
  • 1 cup Chopped Onion
  • ¼ cup All-purpose Flour
  • 2 cups Chicken Broth
  • 1 cup Beer
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Heavy Cream
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Dry Mustard
  • to taste Salt and Pepper

Instructions 

  1. Melt butter in a large pot over medium heat. Add chopped onion and cook until softened.
  2. Stir in flour and cook for about 1 minute, stirring constantly.
  3. Gradually whisk in chicken broth and beer. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in shredded cheddar cheese until melted and smooth.
  5. Add heavy cream, Worcestershire sauce, and dry mustard. Season with salt and pepper to taste. Simmer for another 10 minutes.
  6. Serve hot with crusty bread.
