Ingredients

  • 4 pieces Lamb Shoulder Chops
  • 2 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Red Wine
  • 2 cups Beef Broth
  • 2 sprigs Rosemary
  • to taste Salt and Pepper

Instructions 

  1. 1. Preheat your oven to 325°F (163°C).
  2. 2. Heat olive oil in a Dutch oven over medium-high heat.
  3. 3. Season lamb chops with salt and pepper, then brown them in the Dutch oven. Remove and set aside.
  4. 4. In the same pot, add onions and cook until softened. Add garlic and cook for another minute.
  5. 5. Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for a few minutes.
  6. 6. Add beef broth and rosemary. Return the lamb chops to the pot.
  7. 7. Cover the pot and transfer it to the oven. Braise for about 2 hours, or until the meat is tender.
  8. 8. Serve hot, garnished with additional rosemary if desired.
