Ingredients

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions 

  1. In a large pot, melt butter over medium heat. Add onion and garlic, cook until softened.
  2. Stir in flour and cook for 1-2 minutes.
  3. Gradually whisk in broth and milk. Bring to a simmer.
  4. Add broccoli and cook until tender, about 10-15 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in cheddar cheese until melted. Season with salt and pepper.
