Butternut Squash Chicken Street Tacos
Delicious street tacos with a twist of butternut squash and chicken.

Main Ingredients
- 2 cups Butternut Squash peeled and cubed
- 1 lb Chicken Breast diced
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 8 pieces Tortillas
- 1 cup Sour Cream for serving
- 1 cup Cilantro chopped, for garnish
Preheat oven to 400°F (200°C).
Toss butternut squash with olive oil, cumin, paprika, and salt. Spread on a baking sheet and roast for 20 minutes.
In a skillet, cook diced chicken until fully cooked, about 10 minutes.
Warm tortillas in a dry skillet or microwave.
Assemble tacos by placing chicken and roasted butternut squash on tortillas. Top with sour cream and cilantro.
