Ingredients 

Main Ingredients

  • 2 cups Butternut Squash peeled and cubed
  • 1 lb Chicken Breast diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 8 pieces Tortillas
  • 1 cup Sour Cream for serving
  • 1 cup Cilantro chopped, for garnish

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, cumin, paprika, and salt. Spread on a baking sheet and roast for 20 minutes.
  3. In a skillet, cook diced chicken until fully cooked, about 10 minutes.
  4. Warm tortillas in a dry skillet or microwave.
  5. Assemble tacos by placing chicken and roasted butternut squash on tortillas. Top with sour cream and cilantro.
