Ingredients 

Main Ingredients

  • 1 large Butternut Squash peeled, seeded, and cubed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until the squash is tender, about 20-25 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot.
  5. 5. Stir in the coconut milk, salt, and pepper. Heat through, then serve.
