Instructions
1. Heat a large pot over medium heat. Add a bit of oil and sauté the onions, garlic, and bell pepper until softened.
2. Add the carrots and cook for another 5 minutes.
3. Pour in the fish stock and coconut milk. Bring to a simmer.
4. Add the fish chunks, thyme, salt, and pepper. Simmer for 10-15 minutes, until the fish is cooked through.
5. Stir in the lime juice and adjust seasoning if needed. Serve hot.
