Ingredients 

Main Ingredients

  • 1 lb Fish fillets (snapper or cod) cut into chunks
  • 1 cup Coconut milk
  • 2 Carrots sliced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 2 cups Fish stock
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt or to taste
  • 1 teaspoon Black pepper or to taste
  • 1 Lime juiced

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and sauté the onions, garlic, and bell pepper until softened.
  2. 2. Add the carrots and cook for another 5 minutes.
  3. 3. Pour in the fish stock and coconut milk. Bring to a simmer.
  4. 4. Add the fish chunks, thyme, salt, and pepper. Simmer for 10-15 minutes, until the fish is cooked through.
  5. 5. Stir in the lime juice and adjust seasoning if needed. Serve hot.
