Ingredients

  • 1 lb Ground beef
  • 1 cup Diced onion
  • 1 cup Diced celery
  • 1 cup Diced carrots
  • 3 cups Chicken broth
  • 4 cups Diced potatoes
  • ¼ cup All-purpose flour
  • 2 cups Milk
  • 2 cups Shredded cheddar cheese
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. 2. Add the onion, celery, and carrots to the pot. Cook until the vegetables are tender.
  3. 3. Stir in the chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. 4. In a small bowl, whisk together the flour and milk until smooth. Gradually stir into the soup. Cook until the soup has thickened.
  5. 5. Stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
