Chicken and Gnocchi Soup

Main Ingredients
- 1 tablespoon Olive oil
- 1 cup Onion, diced
- 2 cloves Garlic, minced
- 2 cups Carrots, diced
- 2 cups Celery, diced
- 4 cups Chicken broth
- 2 cups Cooked chicken, shredded
- 1 cup Heavy cream
- 1 package Gnocchi
- 2 cups Spinach, fresh
- to taste Salt and pepper
Heat olive oil in a large pot over medium heat.
Add diced onion, garlic, carrots, and celery. Cook until vegetables are tender.
Pour in chicken broth and bring to a boil.
Add shredded chicken and gnocchi. Cook until gnocchi float to the top.
Stir in heavy cream and spinach. Cook until spinach is wilted.
Season with salt and pepper to taste. Serve hot.
