Ingredients 

Main Ingredients

  • 1 lb Chicken Breast diced
  • 1 cup Rice
  • 6 cups Chicken Broth
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots sliced
  • 2 Celery Stalks sliced
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and cook the onions and garlic until fragrant.
  2. 2. Add the diced chicken and cook until browned.
  3. 3. Add the carrots and celery, cook for a few minutes until they start to soften.
  4. 4. Pour in the chicken broth and bring to a boil.
  5. 5. Add the rice, reduce the heat, and let it simmer for about 20 minutes or until the rice is cooked.
  6. 6. Season with salt and pepper to taste. Serve hot.
