Chicken and Wild Rice Soup

Main Ingredients
- 1 cup wild rice
- 1 lb chicken breast diced
- 1 onion chopped
- 2 carrots sliced
- 2 stalks celery sliced
- 4 cups chicken broth
- 1 cup heavy cream
- to taste salt
- to taste black pepper
1. Cook wild rice according to package instructions. Set aside.
2. In a large pot, heat some oil over medium heat. Add diced chicken and cook until no longer pink.
3. Add chopped onion, sliced carrots, and sliced celery to the pot. Cook until vegetables are tender.
4. Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 20 minutes.
5. Stir in cooked wild rice and heavy cream. Season with salt and black pepper to taste. Simmer for another 10 minutes.
6. Serve hot and enjoy!
