Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 1 thumb-sized piece Ginger, sliced
  • 1 lb Chicken Thighs, bone-in
  • 1 cup Rice uncooked
  • 6 cups Chicken Broth
  • 2 tablespoon Fish Sauce
  • to taste Salt and Pepper
  • 2 pieces Green Onions, chopped for garnish
  • 1 piece Lemon or Calamansi for serving

Instructions 

  1. Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
  2. Add chicken thighs and cook until lightly browned.
  3. Stir in rice and cook for a few minutes.
  4. Pour in chicken broth and fish sauce. Bring to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally, until rice is cooked and the mixture is thickened.
  5. Season with salt and pepper to taste. Serve hot, garnished with green onions and a squeeze of lemon or calamansi.
