Chicken Arroz Caldo Recipe
A comforting Filipino rice porridge with chicken, ginger, and garlic.

Main Ingredients
- 2 tablespoon Vegetable Oil
- 1 medium Onion, chopped
- 4 cloves Garlic, minced
- 1 thumb-sized piece Ginger, sliced
- 1 lb Chicken Thighs, bone-in
- 1 cup Rice uncooked
- 6 cups Chicken Broth
- 2 tablespoon Fish Sauce
- to taste Salt and Pepper
- 2 pieces Green Onions, chopped for garnish
- 1 piece Lemon or Calamansi for serving
Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
Add chicken thighs and cook until lightly browned.
Stir in rice and cook for a few minutes.
Pour in chicken broth and fish sauce. Bring to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally, until rice is cooked and the mixture is thickened.
Season with salt and pepper to taste. Serve hot, garnished with green onions and a squeeze of lemon or calamansi.
