Chicken Tortilla Soup

Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 1 teaspoon Paprika
- 4 cups Chicken broth
- 1 can Diced tomatoes 14.5 oz can
- 1 can Black beans 15 oz can, drained and rinsed
- 1 cup Corn kernels fresh or frozen
- 2 cups Cooked chicken, shredded
- 1 Lime, juiced
- to taste Salt and pepper
- 1 cup Tortilla strips for garnish
- 1 Avocado, diced for garnish
- 1 Cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, red bell pepper, and green bell pepper. Cook for another 5 minutes.
Stir in ground cumin, chili powder, and paprika. Cook for 1 minute.
Add chicken broth, diced tomatoes, black beans, and corn. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Add shredded chicken and lime juice. Season with salt and pepper to taste.
Serve hot, garnished with tortilla strips, diced avocado, and chopped cilantro.
