Ingredients 

Main Ingredients

  • 1 lb Chicken Breast cubed
  • 1 cup Barley
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 3 medium Carrots sliced
  • 2 stalks Celery sliced
  • 6 cups Chicken Broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.
  2. 2. Add the cubed chicken breast to the pot and cook until browned on all sides.
  3. 3. Stir in the sliced carrots and celery, and cook for a few more minutes.
  4. 4. Pour in the chicken broth and add the barley. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the barley is tender.
  5. 5. Season with salt, pepper, thyme, and parsley. Adjust the seasoning to taste.
  6. 6. Serve hot and enjoy!
