Chinese Chicken Fried Rice

- 2 cups Cooked rice
- 1 cup Cooked chicken breast, diced
- 2 tablespoon Soy sauce
- 1 cup Frozen peas and carrots
- 2 Eggs beaten
- 3 tablespoon Vegetable oil
- 2 cloves Garlic minced
- 1 Onion chopped
- 1 teaspoon Sesame oil
- to taste Salt and pepper
Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from wok and set aside.
In the same wok, add the remaining vegetable oil. Add the garlic and onion, and stir-fry until fragrant.
Add the diced chicken and stir-fry for 2-3 minutes until heated through.
Add the frozen peas and carrots, and cook for another 2 minutes.
Add the cooked rice, soy sauce, and sesame oil. Stir-fry everything together for 3-4 minutes.
Return the scrambled eggs to the wok and mix well. Season with salt and pepper to taste. Serve hot.
