Ingredients

  • 1 lb Shrimp peeled and deveined
  • 1 cup Flour
  • 2 cups Shredded Coconut
  • 2 cups Panko Breadcrumbs
  • 3 Eggs beaten
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Vegetable Oil for frying

Instructions 

  1. 1. In a bowl, mix flour, salt, and pepper.
  2. 2. In another bowl, beat the eggs.
  3. 3. In a third bowl, mix shredded coconut and panko breadcrumbs.
  4. 4. Dredge shrimp in flour mixture, then dip in eggs, and coat with coconut mixture.
  5. 5. Heat oil in a frying pan over medium heat.
  6. 6. Fry shrimp in batches until golden brown, about 2-3 minutes per side.
  7. 7. Drain on paper towels and serve hot.
