Ingredients

  • 3 pounds corned beef brisket
  • 1 large head cabbage cut into wedges
  • 6 carrots peeled and cut into chunks
  • 10 small red potatoes halved
  • 1 large onion quartered
  • 1 tablespoon black peppercorns

Instructions 

  1. Place corned beef in a large pot and cover with water. Add the peppercorns and bring to a boil. Reduce heat, cover, and simmer for 2 hours.
  2. Add the potatoes, carrots, and onion. Cover and cook for an additional 30 minutes.
  3. Add the cabbage and cook for another 15 minutes, or until the cabbage is tender.
  4. Remove the corned beef and let it rest for a few minutes before slicing. Serve with the vegetables.
