Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 10 cups water
  • 1 large onion quartered
  • 6 cloves garlic crushed
  • 1 head cabbage cut into wedges
  • 6 large carrots peeled and cut into chunks
  • 6 large potatoes peeled and cut into chunks

Instructions 

  1. 1. Place corned beef in a large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef.
  2. 2. Bring to a boil, then reduce to a simmer. Cover and cook for 2 hours.
  3. 3. Add whole potatoes and carrots, and cook until the vegetables are almost tender.
  4. 4. Add cabbage and cook for 15 more minutes. Remove meat and let rest for 15 minutes.
  5. 5. Slice meat across the grain. Serve with vegetables.
