Ingredients 

Main Ingredients

  • 1 lb fresh asparagus trimmed and cut into 1-inch pieces
  • 1 medium onion chopped
  • 2 tablespoon butter
  • 4 cups chicken broth
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the asparagus pieces and chicken broth. Bring to a boil, then reduce heat and simmer until the asparagus is tender, about 15 minutes.
  3. Remove from heat and let cool slightly. Puree the soup in batches in a blender until smooth.
  4. Return the pureed soup to the pot. Stir in the heavy cream and cook over low heat until heated through. Season with salt and pepper to taste.
  5. Serve hot and enjoy!
