- 1 pint shucked oysters
- 1 cup all-purpose flour
- 2 units eggs beaten
- 1 cup breadcrumbs
- 1 cup cornmeal
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 quart vegetable oil for frying
Heat oil in a deep fryer to 375°F (190°C).
In a bowl, mix flour, cornmeal, salt, and pepper.
In another bowl, beat the eggs.
Dip oysters in the flour mixture, then in the beaten eggs, and finally coat with breadcrumbs.
Fry oysters in hot oil until golden brown, about 2-3 minutes. Drain on paper towels.
