Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 tablespoon Olive oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Flour for thickening

Instructions 

  1. 1. Heat olive oil in a Dutch oven over medium-high heat. Brown the beef cubes on all sides. Remove and set aside.
  2. 2. In the same pot, add the chopped onion and garlic. Cook until softened.
  3. 3. Add the tomato paste, thyme, salt, and pepper. Stir well.
  4. 4. Return the beef to the pot. Add the beef broth, carrots, and potatoes. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 2 hours or until the beef is tender.
  6. 6. If the stew needs thickening, mix the flour with a bit of water to make a slurry and stir it into the stew. Cook for an additional 10 minutes.
