Eggplant Sandwiches Recipe

Main Ingredients
- 1 large Eggplant sliced into rounds
- 2 tablespoon Olive oil
- 4 slices Bread your choice
- 1 cup Arugula
- 1 medium Tomato sliced
- ½ cup Feta cheese crumbled
1. Preheat your grill pan over medium heat.
2. Brush the eggplant slices with olive oil and season with salt and pepper.
3. Grill the eggplant slices for about 5 minutes on each side, until tender and grill marks appear.
4. Toast the bread slices if desired.
5. Assemble the sandwiches by layering eggplant slices, arugula, tomato slices, and crumbled feta cheese between two slices of bread.
6. Serve immediately and enjoy!
