Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 lb shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Cook quinoa in water according to package instructions. Set aside.
  2. In a skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes per side.
  3. In a large bowl, combine cooked quinoa, shrimp, avocado, black beans, cherry tomatoes, red onion, and cilantro.
  4. Drizzle with lime juice and toss gently to combine. Adjust seasoning with salt and pepper if needed.
  5. Serve immediately.
