Ingredients 

Main Ingredients

  • 1 whole chicken about 3-4 lbs
  • 8 cups water
  • 1 cup rice uncooked
  • 3 eggs large
  • 2 lemons juiced
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Place the chicken in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 30 minutes, until the chicken is cooked through.
  2. 2. Remove the chicken from the pot and set aside to cool. Strain the broth and return it to the pot.
  3. 3. Add the rice to the broth and cook until tender, about 20 minutes.
  4. 4. In a bowl, whisk the eggs and lemon juice together.
  5. 5. Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
  6. 6. Gradually add the egg mixture back into the pot, stirring constantly to prevent curdling.
  7. 7. Shred the chicken and add it back to the pot. Season with salt and pepper to taste.
  8. 8. Serve hot and enjoy!
