Ingredients 

Main Ingredients

  • 2 cups cooked couscous
  • 2 pieces chicken breasts cut into strips
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion thinly sliced
  • ½ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large skillet, heat olive oil over medium heat. Add chicken strips and cook until golden brown and cooked through, about 7-10 minutes.
  2. 2. In a mixing bowl, combine cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. 3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and black pepper.
  4. 4. Pour the dressing over the couscous mixture and toss to combine.
  5. 5. Divide the couscous mixture into bowls and top with cooked chicken strips.
  6. 6. Serve immediately and enjoy!
