Greek Lemon Chicken Soup

Ingredients 

Main Ingredients

  • 1 lb Chicken breast boneless, skinless
  • 6 cups Chicken broth
  • ½ cup Rice uncooked
  • 2 Eggs
  • 2 Lemons juiced
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a large pot, bring the chicken broth to a boil.
  2. 2. Add the chicken breast and cook until done, about 15 minutes. Remove and shred the chicken.
  3. 3. Add the rice to the broth and cook until tender, about 15 minutes.
  4. 4. In a bowl, whisk the eggs and lemon juice together.
  5. 5. Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
  6. 6. Gradually add the egg mixture back into the pot, stirring constantly.
  7. 7. Add the shredded chicken back to the pot and season with salt and pepper to taste.
  8. 8. Serve hot and enjoy!
