Ingredients 

Main Ingredients

  • 2 kg Lamb Leg bone-in
  • 1 kg Potatoes peeled and quartered
  • 4 cloves Garlic minced
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. Preheat your oven to 180°C (350°F).
  2. Place the lamb in a roasting pan. Rub it with minced garlic, olive oil, lemon juice, oregano, salt, and pepper.
  3. Add the potatoes around the lamb in the pan. Drizzle with a bit more olive oil and season with salt and pepper.
  4. Roast in the preheated oven for about 2 hours, or until the lamb is tender and the potatoes are golden and crispy.
  5. Let the lamb rest for 10 minutes before carving. Serve with the roasted potatoes.
