Greek Style Beef Stew
A hearty and flavorful Greek-style beef stew.

Main Ingredients
- 2 lbs beef stew meat
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can diced tomatoes 14.5 oz
- 0.5 cup red wine
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 0.5 cup Kalamata olives, pitted and halved
- 0.25 cup fresh parsley, chopped
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Remove beef and set aside. In the same pot, add onion and garlic, sauté until softened.
Add beef back to the pot. Stir in beef broth, diced tomatoes, red wine, tomato paste, oregano, thyme, bay leaves, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 2 hours, until beef is tender.
Stir in olives and parsley before serving.
