Ingredients

  • 1 lb Bay scallops
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper freshly ground
  • 1 tablespoon Parsley chopped

Instructions 

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Toss the bay scallops in the mixture until well coated.
  4. Thread the scallops onto skewers or place them in a grill basket.
  5. Grill the scallops for about 2-3 minutes on each side until opaque and slightly charred.
  6. Remove from the grill and sprinkle with chopped parsley before serving.
