Ingredients 

Main Ingredients

  • 500 g Lamb, cubed
  • 2 tablespoon Vegetable oil
  • 1 large Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 400 ml Coconut milk
  • 1 cup Tomatoes, chopped
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 cup Fresh cilantro, chopped for garnish

Instructions 

  1. Heat the oil in a large pot over medium heat.
  2. Add the onions and cook until golden brown.
  3. Add the garlic and ginger, cook for another 2 minutes.
  4. Add the lamb and cook until browned on all sides.
  5. Stir in the curry powder, turmeric, cumin, and coriander. Cook for 2 minutes.
  6. Add the coconut milk, tomatoes, salt, and pepper. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for 45 minutes or until the lamb is tender.
  8. Garnish with fresh cilantro before serving.
