Instructions
Heat oil in a large skillet over medium heat.
Add chopped onions, garlic, and ginger. Sauté until onions are translucent.
Add curry powder, turmeric, and cumin. Cook for another minute.
Pour in the coconut milk and bring to a simmer.
Add shrimp and cook until they turn pink, about 5-7 minutes.
Season with salt, pepper, and lemon juice.
Garnish with fresh cilantro and serve hot with rice or naan.
