Ingredients 

Main Ingredients

  • 1 lb beef stew meat cut into bite-sized pieces
  • 1 cup pearl barley
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 2 cups water
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Set the Instant Pot to sauté mode and heat a bit of oil. Add the beef and brown on all sides.
  2. 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. 3. Add the beef broth, water, pearl barley, carrots, celery, dried thyme, salt, and pepper. Stir to combine.
  4. 4. Close the lid and set the Instant Pot to pressure cook on high for 25 minutes.
  5. 5. Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  6. 6. Open the lid, stir the soup, and adjust seasoning if needed. Serve hot.
