Ingredients 

Main Ingredients

  • 1 lb Beef stew meat
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 1 can Diced tomatoes (14.5 oz)
  • 1 small Cabbage, chopped
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Dried thyme

Instructions 

  1. 1. Set the Instant Pot to sauté mode and brown the beef stew meat.
  2. 2. Add the chopped onion and minced garlic, sauté until softened.
  3. 3. Pour in the beef broth and deglaze the pot, scraping up any browned bits.
  4. 4. Add the diced tomatoes, chopped cabbage, sliced carrots, diced potatoes, salt, pepper, and dried thyme.
  5. 5. Close the lid, set the valve to sealing, and cook on high pressure for 15 minutes.
  6. 6. Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  7. 7. Open the lid, stir the soup, and adjust seasoning if needed. Serve hot.
