Ingredients 

Main Ingredients

  • 2 lbs Lamb shoulder, cut into chunks
  • 2 cups Beef broth
  • 1 cup Red wine
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 large Carrots, chopped
  • 4 large Potatoes, chopped
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Dried thyme
  • to taste Salt and pepper

Instructions 

  1. 1. Set your Instant Pot to sauté mode. Add a bit of oil and brown the lamb chunks on all sides. Remove and set aside.
  2. 2. In the same pot, add the chopped onion and garlic. Sauté until softened.
  3. 3. Add the tomato paste, rosemary, and thyme. Stir well.
  4. 4. Pour in the red wine, beef broth, and return the lamb to the pot. Add the carrots and potatoes.
  5. 5. Close the lid and set the Instant Pot to high pressure for 35 minutes.
  6. 6. Once done, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  7. 7. Season with salt and pepper to taste. Serve hot.
