Ingredients

  • 3 pounds corned beef brisket
  • 1 large head of cabbage cut into wedges
  • 6 medium carrots peeled and cut into chunks
  • 6 medium potatoes peeled and cut into chunks
  • 1 large onion peeled and cut into wedges
  • 1 tablespoon black peppercorns
  • 1 tablespoon mustard seeds
  • 2 cloves garlic peeled

Instructions 

  1. 1. Place the corned beef brisket in a large pot and cover with water. Add the peppercorns, mustard seeds, and garlic.
  2. 2. Bring to a boil, then reduce heat and simmer for 2.5 hours.
  3. 3. Add the potatoes, carrots, and onion. Simmer for another 30 minutes.
  4. 4. Add the cabbage wedges and cook for an additional 15 minutes, or until the cabbage is tender.
  5. 5. Remove the corned beef and let it rest for a few minutes before slicing. Serve with the vegetables.
