Irish Lamb Stew Recipe

Main Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 4 cups beef broth
- 1 large onion, chopped
- 3 large carrots, sliced
- 4 large potatoes, peeled and cubed
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides.
Add onions and garlic, cook until softened.
Pour in beef broth, add thyme and rosemary. Bring to a boil, then reduce heat and simmer for 1 hour.
Add carrots and potatoes, simmer for another hour until vegetables are tender.
Season with salt and pepper to taste. Serve hot.
