Ingredients 

Main Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 4 cups beef broth
  • 1 large onion, chopped
  • 3 large carrots, sliced
  • 4 large potatoes, peeled and cubed
  • 2 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides.
  2. Add onions and garlic, cook until softened.
  3. Pour in beef broth, add thyme and rosemary. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Add carrots and potatoes, simmer for another hour until vegetables are tender.
  5. Season with salt and pepper to taste. Serve hot.
