Island Style Fried Rice Recipe

Main Ingredients
- 2 cups Cooked rice preferably day-old
- 1 cup Pineapple chunks fresh or canned
- 1 cup Mixed vegetables carrots, peas, corn
- 2 tablespoon Soy sauce
- 2 tablespoon Vegetable oil
- 2 cloves Garlic minced
- 1 teaspoon Ginger minced
- 2 pcs Eggs beaten
- 2 pcs Green onions chopped
1. Heat the wok over medium-high heat and add vegetable oil.
2. Add garlic and ginger, sauté until fragrant.
3. Add mixed vegetables and cook for 2-3 minutes.
4. Push the vegetables to the side, add beaten eggs and scramble until cooked.
5. Add cooked rice, soy sauce, and pineapple chunks. Stir-fry for another 5 minutes.
6. Garnish with chopped green onions and serve hot.
