Ingredients 

Main Ingredients

  • 2 lbs Lamb Shoulder cut into chunks
  • 2 cups Pomegranate Juice
  • 1 large Onion chopped
  • 4 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 2 tablespoon Olive Oil
  • 1 cup Chicken Broth
  • 0.25 cup Pomegranate Seeds for garnish
  • 2 tablespoon Fresh Parsley chopped, for garnish

Instructions 

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Season lamb with salt and pepper. Brown lamb in batches, setting aside browned pieces.
  3. In the same pot, add chopped onion and cook until softened.
  4. Add minced garlic, ground cumin, and ground coriander. Cook for another minute.
  5. Return lamb to the pot. Add pomegranate juice and chicken broth. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 2 hours or until lamb is tender.
  7. Garnish with pomegranate seeds and fresh parsley before serving.
